About Pítiri
In 1983, Pítiri went to study Culinary Arts, training in the prestigious College of Culinary Arts of Johnson & Wales University in Providence, Rhode Island, USA. He graduated in 1986, and returned to the Dominican Republic, being hired shortly after to work as sous-chef for Casa de Campo, in La Romana
Two years later in 1988, the doors to “Restaurante Pítiri” opened in Santo Domingo, capital of the Dominican Republic; a venue where people who appreciated a fine meal, went and had access to the finest gourmet dishes made in Santo Domingo.
It is here when Pitiri debuts offering catering and banquet services for all occasions. Asides his restaurant, he taught courses on Basic Kitchen Preparation, Table Serving and Banquets in the School of Hotel and Tourism Management of the Ibero-American University-(UNIBE), using his restaurant as setting for those courses and on-site trainings.
“Restaurante Pitiri” was a raving success throughout its existence, a time when the financial crisis was deeply felt in Santo Domingo. Its doors closed in summer 1993, to make way for a new and unique concept, to be located in the same restaurant.
Amid the restructuring process, which took around seven months, the restless chef, served as Food & Beverage Manager in the Bayside Hill Resort, located in Puerto Plata, in the northern shore of the Dominican Republic.
Pitiri’s credentials also feature serving as Director to the Food and Beverages Department of the Santo Domingo Country Club.
In March 1994, “Pitiri” reopened its doors, alongside his brothers, featuring a new concept, “Lori’s Steak House”, an impact that to this day, pioneered in the Santo Domingo gastronomic scene. Lori’s Steak House was the precursor for steakhouse concepts, and the first to offer U.S imported cuts in its menu.
In 1999, Pitiri returns to the hospitality industry, hired to prepare for the launch of, assuming the position of Banquets and Restaurant Head for the “Bogavante” Restaurant, in the Coral Costa Caribe Beach Resort, a hotel located in Juan Dolio, east of Santo Domingo; in 2001, he is offered the position of Food and Beverage Manager to Cap Cana, a new exclusive resort concept in Punta Cana.
In 2003, he returns to Casa de Campo as its new “Banquets Director”, responsible for the coordination of banquets, private catering services and prestigious special events. By late 2003, he returns to Cap Cana, where he remained until its official opening in 2004.
